EGG AND POTATO BAKE
• 9 eggs
• 1 large russet potato
• 4 sausages (cubed)
1. beat 8-9 eggs add 1/3 cup milk,add couple of tablespoons of fresh grated cheese (if available). Set aside.
2. Peel and cut one large potato into small pieces boil approx 5-6 minutes drain in a large skillet use a little olive oil while potatoes are cooking cube sausages, add to pot and saute for approx 12-15 minutes on med to high heat when done strain the oil and grease add to egg mixture put in a 9'' or larger pie dish
3. Put in oven, bake at 350 degrees for 40 minutes
4. Let cool and serve warm
